Ingredients:
- 1 cup raw papaya, peeled and grated
- 1 cup mixed vegetables (potatoes, eggplant, pumpkin), chopped
- 1/2 cup lentils (split Bengal gram), washed and soaked for 30 minutes
- 1 tbsp mustard oil
- 1/2 tsp fenugreek seeds
- 1/2 tsp cumin seeds
- 2-3 dried red chilies
- 1/2 tsp turmeric powder
- Salt, to taste
- 2 cups water
Instructions:
Heat mustard oil in a pan and add fenugreek seeds, cumin seeds, and dried red chilies. Fry for a few seconds until the spices release their aroma.
Add grated raw papaya to the pan and fry for 2-3 minutes until it turns slightly brown.
Add chopped mixed vegetables to the pan and fry for another 2-3 minutes.
Add soaked lentils, turmeric powder, salt, and water to the pan. Mix well and cover the pan with a lid.
Cook for 15-20 minutes on medium heat until the lentils and vegetables are cooked and the water has been absorbed.
Serve hot with steamed rice.
