Pro Tips:
Choose the right type of rice flour: Use a fine quality rice flour that is specifically meant for making puttu. You can find puttu podi (rice flour) in most Indian grocery stores or online.
Moisture content: The right moisture content is crucial to making soft and fluffy puttu. Sprinkle water little by little over the rice flour and mix with your fingers until it reaches the right texture. It should be damp but not wet.
Soak the rice flour: To make the puttu extra soft, you can soak the rice flour in water for 10-15 minutes before preparing the dough.
Use a good steamer: A good quality steamer is important to get perfectly cooked puttu. You can use a traditional puttu maker or a modern steamer.
Layering: Layering the puttu with grated coconut adds a delicious flavor and texture. You can also layer with other ingredients like banana, jackfruit, or even meat.
Steam properly: After layering the puttu, steam it for about 10-15 minutes or until the puttu is cooked through. Don't over-steam the puttu, as it can become dry and hard.
Serve hot: Puttu tastes best when served hot. You can serve it with kadala curry, vegetable stew, or any spicy curry of your choice.
